Buckwheat Banana Blueberry Muffins

WEBPreheat oven to 375. Line a muffin tin with liners or spray with olive or coconut oil spray. Add all ingredients (except frozen blueberries) into a mixing bowl and mix well until combined. Add in blueberries at the end and gently stir. Scoop batter into muffin tins and fill to the top. Bake for 25 minutes until done.

Freezer Meal Instantpot Ratatouille

WEBChop all veggies and add to a freezer bag with tomatoes, broth and spices. Squeeze all the air out of the bag and freeze laying flat. When ready to eat, thaw bag as best you can and dump into instantpot (cook for 10 mins on high pressure) or crockpot (cook for 4-6 hours).

3 Ingredient Tomato Soup

WEBPreheat oven to 400ºF and line a baking sheet with parchment paper. Toss tomatoes, baby tomatoes and leeks with olive oil and sprinkle with sea salt and pepper. Poblano Chicken Tortilla Soup

WEBCook for 10 minutes, or until done, discard the water, and shred the meat apart with a fork. Alternatively, you can bake the chicken. After the peppers have browned in the stockpot, add tomatoes, butter and stock. Transfer all to a blender and puree soup until creamy. Add the chicken and any toppings right before serving.

WEBPreheat the oven to 450ºF and line a baking sheet with parchment paper. Slice the potatoes into thin wedges of similar thickness. Add all to a baking sheet and drizzle with olive oil. Rub each wedge thoroughly with your hands to coat well, then space out evenly on the pan. Sprinkle with sea salt, pepper and herbs and roast for 15 minutes.

Italian-Style Egg Salad

WEBInstructions. Bring a few cups of water to a boil over the stove (enough to cover the eggs). When boiling, gently add eggs to the water, and cook for 8 minutes.
